How to Make Butternut Squash Bisque

Today we will show you how to make an amazingly simple and savory soup called a butternut squash bisque. Let us get started. You will first need one large butternut squash, you will need to peel it, core it, and then dice it up and place it in a bowl. Butternut squash has a beautiful rich orange color to it. You will then need to peel and dice white potatoes, about half the amount of squash is good, which is 2 and a half potatoes that is perfect. You will also need a large yellow onion and finely chop it. Two table spoons of butter is also needed along with a teaspoon of paprika. You will also need to get a quart and a half of chicken broth.

Start with placing the butter into a large sauce pan and heating it up. Once butter is melted a bit add in the large yellow onion that has been diced and sauté it until it is translucent in color. Basically you want your onions soft and able to puree later in the food processor. It will take about 5 minutes of cook time to get your onion where it needs to be. Sometimes people will then add a little bit of pepper and salt to their onions but since we are using chicken broth that already contains salt we will leave that out. You do not want to make your butternut squash bisque to salty. Pepper is not really needed for this recipe either, this is more of a soup that is sweet so we are going to keep the seasoning to a minimum. By the way if you want to use more butter you can. Please do not use fake butter life is to short to use fake butter.

Once the onions are translucent and soft we will add out broth that has been chilled. Even though you have a quart and a half start with just a quart. Bring it all to a boil. This recipe will make enough bisque for six to eight people to enjoy.

Once it is all boiling add the potato and squash pieces and let the boil for 15 to 20 minutes or so. Make sure do not overcook your potatoes and squash or make them mushy. Keep a close eye on the butternut squash more than the potatoes because it will soften quicker then the potatoes. You can check them by poking them with a fork. Go ahead and add the paprika to your pot with everything is boiling.

Now take your ingredients and place them in a food processor. Do not use the broth at this time. just spoon out all other ingredients and place in the food processor. Once ingredients are in food processor pour about half of your broth over top.

You are now ready to turn on your food processor and puree everything inside. Make sure to not pulse the food processor slowly work up to full speed and let is sit there until all contents are pureed. Letting it sit on full will make sure everything gets pureed and your bisque is nice and creamy. Once your bisque is at the right consistency pour it back into a sauce pan on the stove. You can now add about a cup of half and half to your bisque. Make sure not to overdo it with the half and half. You can use heavy cream if you prefer. Now stir it all together. As you stir it together yes have your heat on but you do not need to cook it anymore just keep it nice and warm. Now that there is half and half or heavy cream depending on your preference if you bring it to a boil it will just mess it all up. It is now ready to serve.

Spoon your butternut squash into a bowl and top it off with some freshly cut chives if you prefer. You can even decorate the top with strips of chives if you would prefer that over chopped. You can also top it off with a little bit of fresh ground pepper. It all depends on what you and your guests prefer.
